Summer is here!
I have two young kids and summer means the freezer is full of ice blocks for that 3pm refreshment. The fresh lemonade ice blocks are always a hit and the pine-lime are a great tropical treat.
You can easily amend these recipes to make simple variations. Try reducing the pineapple juice and adding some coconut milk, or omit the mint and add a few dashes of bitters. So simple – Enjoy!
Try the mixture before freezing as the sweetness level may need to be adjusted depending on the sweetness of the fruit or juice you use.

Notes
Pine-lime mint ice blocks: You can leave the mint in the pineapple mixture for extra flavour and texture. It will float to the base of the ice block moulds and form a minty layer. You can add some finely grated lime rind for added lime flavour.
