You will need six 1/4 cup (60ml) ice block moulds for each recipe.
Ingredients
Pine-lime mint ice blocks
1/4cuplime juice
1 1/2 cups pineapple juice
1/4 cuppure icing sugar
1/4cupchopped fresh mint
thin slices of limeif desired
Lemonade ice blocks
1/3cuplemon juice
2/3cuppure icing sugar
1 1/4cups sparkling mineral water
Instructions
Pine-lime mint ice blocks
Stir juices and sugar in medium jug until sugar dissolves. Stir in mint. Stand mixture for 20 minutes to allow mint to infuse. Strain mixture, discarding mint.
Pour mixture into six ¼ cup (60ml) ice-block moulds. Top with a slice of lime (if using). Insert sticks. Freeze overnight until firm.

Stir juice and sugar in medium jug until sugar dissolves. Stir in mineral water. Pour mixture into six ¼ cup (60ml) ice-block moulds. Insert sticks. Freeze overnight until firm.
Notes
Pine-lime mint ice blocks: You can leave the mint in the pineapple mixture for extra flavour and texture. It will float to the base of the ice block moulds and form a minty layer. You can add some finely grated lime rind for added lime flavour.
