Whole spice-roasted cauliflower with pomegranate

Love cauliflower! Its so versatile and delicious. Here I have roasted it whole with spices and finished it with fresh herbs – couldn’t be simpler. Enjoy!

  1. Preheat oven to 220°C/200°C fan-forced. Trim off the larger outer leaves from the cauliflower. Trim the base so the cauliflower sits flat. Cut a cross in the base. Place in a small baking dish. Drizzle with oil.
  2. Sprinkle cauliflower with chilli, fennel and pepper and drizzle over juice. Pour stock into dish.
  3. Bake, covered, for 30 minutes. Uncover and bake for 30 minutes or until tender when pierced with a small knife. Transfer to a serving dish. Sprinkle with pomegranate seeds, parsley and mint.
Recipe Notes

You will need ½ fresh pomegranate for this recipe.
