  1. Preheat oven to 180°C/160°C fan-forced. Grease and line a 20cm round cake pan with baking paper.
  2. Using electric beaters, cream butter and sugar in a large bowl until light and fluffy. Add eggs, one at a time, beating until combined. Stir in sifted flour, bicarbonate of soda, banana, sour cream and milk.
  3. Spread mixture into prepared pan. Smooth top. Bake for 55-60 minutes or until cooked when tested with skewer. Cool for 5 minutes before turning onto a wire rack to cool.
Recipe Notes

For a simple icing, beat 125g room temperature cream cheese with 1 cup icing sugar. Scatter with chopped toasted walnuts or pecans.
