Pine-lime mint ice-blocks

Instructions
  1. Stir juices and sugar in medium jug until sugar dissolves. Stir in mint. Stand mixture for 20 minutes to allow mint to infuse. Strain mixture, discarding mint.
  2. Pour mixture into six ΒΌ cup (60ml) ice-block moulds. Top with a slice of lime (if using). Insert sticks. Freeze overnight until firm.
Recipe Notes

TIP: You can leave the mint in the pineapple mixture for extra flavour and texture. It will float to the base of the ice block moulds and form a minty layer. You can add some finely grated lime rind for added lime flavour.
