Old-fashioned curried prawns and rice

This month I have a comfort food classic – Curried prawns and rice. I find it’s a great alternative to slow cooked stews during the cooler months. Its warming, simple and delicious and on the table in 30 minutes!

The amount of curry powder will depend on your taste and the brand used, so start with less and increase to taste. Hope you enjoy!

  1. Heat oil in a large deep frying pan over medium-high heat. Add onion, celery and corn and cook, stirring, for 5 minutes or until onion softens.
  2. Add prawns and curry powder and cook, stirring, for 1 minute or until fragrant. Add sugar and milk and bring to the boil. Reduce heat and simmer for 3 minutes or until prawns are just cooked.
  3. Combine cornflour and 1/3 cup (80ml) water in a small jug. Add cornflour mixture and bamboo to curry mixture and cook for 1 minute or until sauce thickens and bamboo is heated through.
  4. Meanwhile, boil, steam or microwave asian-style greens until just tender. Drain. Serve curry with vegetables and rice.
