Ingredients

  1. Line a 19cm square cake pan with baking paper.
  2. Melt chocolates in a glass or metal bowl over a pan of simmering water, making sure the base of the bowl doesn’t touch the simmering water. Remove from heat. Stir in oil and set aside for 5-10 minutes.
  3. Meanwhile, halve the marshmallows and pieces of turkish delight. Add the nuts and coconut to chocolate mixture and stir to combine. Then add the marshmallows and turkish delight. Stir to combine.
  4. Spoon mixture over base of prepared pan, flattening slightly. Refrigerate until set. Cut rocky road into bite-size pieces. Keep refrigerated until ready to serve.

Obviously this isnt only for Christmas! There is always an excuse to ‘whip’ up a batch.

Store rocky road in an airtight container in the refrigerator.
