Rocky Road chocolate treat on white platter

Almost every year I make Christmas treats – sometimes its mince pies, or gingerbread, but I would have to say everyone’s favourite is my rocky road.


Rocky road is easily modified, so if you don’t like turkish delight, replace it with extra marshmallows or some dried cranberries or even glace fruits. Replace peanuts with extra pistachios for a peanut-free version. Its so easy – My kids even helped me make this batch.

My Christmas rocky road

Ingredients
  

  • 200 g good-quality dark chocolate chopped
  • 200 g good-quality milk chocolate chopped
  • 1 tbs vegetable oil
  • 1/4 cup crushed peanuts (or chopped roasted unsalted peanuts)
  • 1/4 cup pistachio kernels
  • 1/2 cup shredded coconut toasted
  • 140 g marshmallows halved
  • 150 g turkish delight pieces halved

Instructions
 

  • Line a 19cm square cake pan with baking paper.
  • Melt chocolates in a glass or metal bowl over a pan of simmering water, making sure the base of the bowl doesn't touch the water. Remove from heat. Stir in oil and set aside for 5-10 minutes.
  • Add nuts and coconut and stir to combine. Add marshmallows and turkish delight and stir to combine.
  • Spoon mixture over base of prepared pan, flattening slightly. Refrigerate until set. Cut rocky road into bite-size pieces. Keep refrigerated until ready to serve.

Notes

Obviously this isnt only for Christmas! There is always an excuse to ‘whip up’ a batch of Rocky Road.
Store rocky road in an airtight container in the refrigerator.
