  1. Combine flour, seasoning, cayenne pepper and sugar in a medium bowl. Season with salt. Whisk eggs in a medium bowl until combined. Place chicken in egg mixture and toss to coat. Coat chicken pieces, in batches, in flour mixture.
  2. Heat oil in a large heavy-based saucepan over moderate heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry chicken, in batches, for 4-5 minutes or until golden and cooked through. Using a slotted spoon, transfer to paper towels.
  3. Serve immediately with your favourite dipping sauce.

tipS: You could make this recipe using peeled green prawns for a simple twist. If serving this as an appetiser it will serve 6-8 people, depending on what else you are serving.
